DUTCH APPLE CAKE 
2 eggs
1/2 c. sugar
1 1/2 c. sifted flour
2 tsp. baking powder
1/4 tsp. salt
1/4 c. milk
3 tbsp. melted shortening
1/4 tsp. lemon extract
1/2 tsp. vanilla
4 apples, pared and sliced
1/4 c. sugar
1/2 tsp. cinnamon
2 tbsp. seedless raisins (optional)

Beat egg in electric mixer. Add sugar while beating. Sift flour, baking powder and salt together. Add to egg mixture with milk, shortening and flavorings.

Place in greased square cake pan. Cover top with apples, pressing edges into dough. Sprinkle with cinnamon, sugar and raisins. Bake 30 minutes in 400 degree oven. Serve with Lemon Sauce.

LEMON SAUCE:

1/2 c. sugar
1 1/2 tsp. cornstarch
1/8 tsp. salt
1 c. boiling water
2 tbsp. butter
1/8 tsp. nutmeg
1 1/2 tbsp. lemon juice

Combine sugar, cornstarch and salt. Add to boiling water and cook on low heat for 10 minutes. Add butter, nutmeg, and lemon.
