EGGPLANT PARMESAN 
1 eggplant
Egg
Flavored bread crumbs
Oil for frying
American or muenster cheese
Cottage cheese
Marinara sauce

Peel and slice eggplant. Dip into beaten eggs and then into flavored bread crumbs. Fry in oil. Place in baking pan. Top each slice with 1/2 slice of muenster or American cheese, 1 heaping teaspoon of cottage cheese and 1 tablespoon of Marinara sauce. Bake at 350 degrees for 1/2 hour.
