POTATOES AND CHEESE 
4 med. potatoes
2 med. onions
3 tbsp. butter
1/2 lb. sliced cheese (your favorite)
Salt
Pepper
1/2 c. undiluted canned chicken stock
Chives, chopped

Pare potatoes, slice thinly and rinse with cold water to prevent darkening.

Slice onions. Heat half the butter in a skillet. Add onions and saute for 2 to 3 minutes until onions are limp.

Layer half the potatoes in a buttered shallow baking dish. Add half the onions in a single layer. Top with half the cheese, another layer of potatoes and the remaining onions. Sprinkle with salt and pepper. Top with remaining cheese.

Pour broth evenly over potatoes. Use the remaining butter. Cover with foil and bake at 350 degrees for 20 minutes. Remove cover and bake another 20 minutes or until potatoes are tender. Garnish with chives and serve immediately.
