ESTHER'S ZUCCHINI BREAD 
3 eggs
1 c. oil
1 c. brown sugar
1 c. white sugar
1 tbsp. maple flavoring
1/2 tsp. baking powder
2 c. unpeeled diced zucchini
1/4 c. chopped walnuts
2 1/2 c. flour
1/2 c. wheat germ
2 tsp. baking soda
2 tsp. salt

Starting with eggs, oil and sugars, blend well and add rest of ingredients, blending more thoroughly. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour. Cool in pans 10 minutes before removing loaves.
