POTATO SALAD - AUNTIE ESTHER'S 
20 lb. potatoes
3 doz. hard boiled eggs
1 qt. dill pickles
4 grated carrots
3 qt. Miracle Whip dressing
Juice of 1 lemon
4 chopped white onions
1 bunch chopped green onions

Boil potatoes whole with skins, peel after cooled. Dice potatoes and pickles. Mix dressing, carrots, lemon juice and onions in separate bowl. Fold into salad, along with sliced eggs.

Salt and pepper to taste. Use pickle juice if needs to be thinned. Garnish with sliced eggs and paprika. Makes 75 to 100 servings.
