TUNA BOMBAY SALAD | |
2 (7 oz.) cans chunky tuna, packed in water (2 c.) 1 c. diced celery Dash of lemon juice 1 1/2 c. cold cooked rice 1/2 tsp. pepper 1/2 - 1 tsp. curry powder 1/2 tsp. salt 1/2 c. Hellmann's mayonnaise (lite) Combine first seven ingredients. Toss with mayonnaise. Line a shallow bowl with leaf or Romaine lettuce. Pile tuna fish on lettuce, top with fresh radish, sliced hard cooked eggs and sprinkle with paprika. Serve with your choice of condiments. Peanuts, chopped, green peppers, gherkin pickles, chopped raisins, etc. |
