EBLESKIVER 
3 eggs
2 tbsp. sugar
1/4 tsp. salt
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
2 c. buttermilk

Separate eggs. Beat whites until light and fluffy. Mix egg yolks, sugar, salt, flour, baking soda, baking powder and buttermilk together. Fold in egg white.

Using Ebleskiver pan, put 1/4 teaspoon cooking oil in each section. When hot, fill each section with batter. Turn over and cook until done.
