HARVARD BEETS 
1 can diced beets
1/2 c. sugar
1 tbsp. cornstarch
1/3 c. vinegar
1/4 c. beet juice

Over heat in saucepan combine sugar, cornstarch, vinegar and beet juice. Cook, stirring occasionally until thickened and clear. Add beets and cook a few minutes longer.
