CRAB BISQUE 
3 tbsp. butter
4 tbsp. flour
1 tsp. salt
1/8 tsp. pepper
3 c. milk
1 c. canned chicken broth
1/2 lb. crab meat
1 med. onion, sliced
1/2 c. light cream
Sherry to taste

Melt butter, stir in flour, salt and pepper. Add milk and chicken broth slowly, stir constantly. Simmer until thickened. Add onion and simmer 10 minutes. Strain to remove onion. Add crab and cream. Reheat. Add sherry before serving.

Lobster, shrimp or a combination of all three.
