SWEET POTATO SOUFFLE 
1 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. milk
1/2 c. butter
3 c. sweet potatoes, mashed

Mix all ingredients and place in buttered baking dish.

TOPPING:

1 c. brown sugar
1/2 c. self-rising flour
2 c. pecans, chopped
1/2 c. butter

Mix by hand. Sprinkle on top of potatoes. Bake 30 minutes at 350 degrees.
