SWEET POTATO SOUFFL 
2 c. sweet potatoes, cooked and drained
1 c. sugar
1/2 stick butter
1 tsp. vanilla
1/2 tsp. salt
2 eggs
1/2 c. sweet milk

Beat together and place in long baking dish. Add topping. Can add marshmallows to top.

Topping:

1 c. light brown sugar
1/2 stick butter, melted
1/3 c. self-rising flour

Mix together and sprinkle on top of potato mixture.

Bake at 350°F for 35 to 40 minutes.
