PUMPKIN GINGERBREAD 
2 c. all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 lg. egg
1/2 c. plus 1 tbsp. sugar
1/2 c. pumpkin puree, canned
1/2 c. oil
1/2 c. molasses
2 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
1/2 c. boiling water

Preheat oven to 350 degrees. Grease and flour loaf pans. Sift dry ingredients to mix thoroughly. In a separate bowl, beat egg and sugar in bowl. Add pumpkin on molasses and spices and boiling water. Mix in dry until just mixed.
