WHOLESOME PANCAKES 
3/4 c. whole wheat flour
3/4 c. enriched white flour
3/4 tsp. baking soda
3/4 tsp. baking powder
1 tbsp. plus 1 tsp. sugar
1/4 tsp. salt
1 tbsp. lemon juice
1 1/4 c. lowfat milk
1 lg. whole egg
2 tbsp. oil

Mix first 6 ingredients in a bowl. In a separate bowl, mix together the next 4 ingredients and then add the dry ingredients, stirring to break up lumps. Do not over mix.

Measure 1/4 cup batter for each pancake. Pour on lightly greased preheated skillet or fry pan. Flip when bubbles appear on top of the pancake batter. Serve warm with sliced strawberries and banana.
