TOFU ITALIANO, A CASSEROLE 
1 (10 oz.) pkg. soft tofu, drained & mashed
6-8 oz. flat egg noodles
1 tbsp. oil
1 med. onion, diced
1/2 tsp. garlic powder
Salt & pepper to taste
3 c. Italian style tomato sauce
1 c. cheddar cheese, grated

Boil noodles until tender, not soft. Drain. Preheat oven to 350 degrees. Heat oil in skillet over medium high heat. Add onion and saute until translucent. Add tofu, garlic powder, salt and pepper, and continue cooking until steaming stops, 3 to 5 minutes. Add tomato sauce and simmer, uncovered for 5 minutes. Toss noodles and tomato sauce mixture in 2 quart casserole. Sprinkle cheese on top. Bake until cheese melts, about 15 minutes.
