TEXAS STUFFED PEPPER 
6 green bell peppers
1 lb. ground beef
2 c. cooked rice
1 (8 oz.) tomato sauce
1 (8 oz.) tomato paste
1 c. water
1 tbsp. pepper
1 tbsp. sugar
1 tbsp. hot sauce
1/2 tsp. sage
1 c. chopped onion

In skillet, brown ground beef; drain off drippings. Add onions, salt, pepper and sage; cook thoroughly. In small bowl, mix hot sauce, tomato sauce and tomato paste with 1 cup water. Add half of sauce mixture to ground beef; cook slowly. Add rice. Cut out (from the top) bell pepper and wash thoroughly. With a spoon, stuff green pepper with mixture, letting overflow just a little.

Bake at 350°F in oven for 30 minutes.

Serves 6.
