RICOTTA COOKIES 
1/2 c. butter, or butter
2 c. sugar
3 eggs, beaten
1 lb. ricotta cheese
4 c. flour
1 tsp. baking soda
1 tsp. salt
2 tsp. vanilla

FROSTING:

1 stick butter, or butter
1 egg
1 box confectioners sugar
Milk
Food coloring to taste

Cream butter and sugar. Add eggs and ricotta cheese. Add flour, soda, salt and vanilla. Stir until well mixed. Chill for 1 hour. Drop onto lightly floured cookie sheet. Bake at 350 degrees for 14 minutes. Remove from sheet and cool. When cool spread with frosting.

FROSTING: Beat together the butter, egg, sugar and enough milk to make moist. Beat well. I always tint the frosting. This is a big favorite of my family. Hope you enjoy them as much as we do. Yields 7 dozen.
