PINEAPPLE MUFFINS 
1/2 c. butter, softened
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. plain flour
2 tsp. baking powder
1/2 tsp. salt
1 small (8 1/4 oz.) can crushed pineapple (undrained)

Cream butter and sugar until light and fluffy; add eggs, 1 at a time, beating well after each addition. Stir in vanilla. Combine flour, baking powder and salt. Add to creamed mixture. Stir in pineapple. Fill greased or paper-lined muffin pans half full.

Bake at 375°F for 20 to 25 minutes.
