HOMEMADE PASTRY MIX 
With Lard:
7 c. sifted flour
4 tsp. salt
2 c. lard
With Veg. Shortening:
6 c. sifted flour
1 tbsp. salt
1 tbsp. veg. shortening (about 2 1/3 c.)

Mix flour and salt in large bowl. Cut in lard or shortening until mixture resembles coarse meal. Cover and store. Mixture made with lard in refrigerator. Mixture made with vegetable shortening in a cool place. Makes 8 to 9 cups.

Crust for 1 Crust Pie: Use 2 to 4 tablespoons cold water and 1 1/2 cups mix.

Crust for 2 Crust Pie: 4 to 6 tablespoons cold water and 2 1/2 cups mix.

I store Pastry Mix in ice cream buckets in the refrigerator and a quick pie is easy to make.
