VEGETABLE MEDLEY 
1 1/2 c. sliced onions
2 c. celery strips - 2 inches long
1 1/2 c. carrot strips - 2 inches long
2 c. fresh green beans - 1 1/2 inches long
3/4 c. green pepper strips
2 c. canned tomatoes or fresh cut into wedges
1 can tomato juice
2 tsp. salt
1/4 tsp. pepper
1 tbsp. sugar
3 tbsp. Minute Tapioca
4 tbsp. butter

Cook on high until boiling, then simmer until vegetables are tender. Add a small can of tomato juice if needed.
