OATMEAL, RAISIN, APPLE MUFFINS 
2 c. Quaker oats
1 3/4 c. flour
1 tbsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/2 c. brown sugar
1/2 c. skim milk
1 c. unsweetened applesauce
3 tbsp. vegetable oil
1 egg white
1/2 c. raisins

1. Mix all dry ingredients thoroughly.

2. Add remaining ingredients. If batter is too dry add more applesauce.

3. Fill 12 muffin tins. Bake at 400 degrees for 20-25 minutes.

4. Let cool. May be eaten warm or cool. They also freeze well.
