GREEK RICE PUDDING | |
6 c. whole milk 1 c. regular, cheapest rice (not converted) 2/3 c. sugar Cook above ingredients. Mix: 2 beaten eggs 1 (13 oz.) can evaporated milk 1 tsp. vanilla 2 tsp. butter (preferably unsalted) Cinnamon (garnish) In a large saucepan, place rice, sugar and milk. DON'T STIR. Cover and heat over medium low flame until it starts to steam, 20 minutes. Watch after 15 minutes so it doesn't boil over. Uncover, stir. Lower heat to simmer. Cover loosely and cook 40 minutes, stirring frequently until the rice is tender. Mix beaten eggs with evaporated milk and gradually add to the rice mixture. Add the vanilla and the butter. Cook 5 minutes more stirring constantly until the mixture thickens. DO NOT LET THE MIXTURE BOIL! Ladle into dish and sprinkle with cinnamon. Follow directions and times exactly as it comes out perfect every time. Do not try to double the recipe. If you need more, make two batches. |
