BROCCOLI RICE QUICHE 
1 1/2 c. hot, cooked, enriched rice
3 oz. grated, sharp cheddar cheese
3 eggs
3 oz. milk
3/4 c. drained, canned, sliced mushrooms
1 1/2 c. (10 oz. pkg.) frozen chopped broccoli, thawed
Salt and pepper

Spray bottom and sides of a 9 inch pie pan with non stick spray. Combine rice, half the grated cheese, 1 egg and a dash of salt and pepper. Mix well. Press firmly in an even layer on bottom of the 9 inch pie pan. Beat remaining eggs slightly. Stir in milk, mushrooms and broccoli. Season with salt and pepper. Spoon over rice in pie pan. Bake at 375 degrees for 30 minutes. Sprinkle remaining cheese over broccoli, mushroom mixture. Bake 10 minutes longer. Center should be firm.
