LO-CAL BROCCOLI QUICHE 
Combine:

1 1/2 c. cooked rice
1 egg, beaten
1 1/2 oz. Cheddar cheese, grated

Mix well; press onto the sides and bottom of a 9 inch pie pan.

Combine:

2 eggs, beaten
6 tbsp. skim milk
1 sm. can sliced mushrooms (drained)
1/2 tsp. salt
1/4 tsp. pepper
1 pkg. frozen chopped broccoli, cooked and drained

Mix well; pour over rice crust in pie pan. Bake at 350 degrees for 35-40 minutes. Remove from oven. Sprinkle with 1 1/2 ounce low fat grated Cheddar cheese. Bake 10 more minutes or until cheese melts.
