SPECIAL FRIED CHICKEN 
1 1/2 - 2 c. all purpose flour
1 1/2 tsp. salt
2 tsp. paprika
1 egg, beaten
1/3 c. milk
2 tbsp. lemon juice
2 (2-3 lb.) broiler fryers, cut up
Vegetable oil

Combine the flour, salt and paprika. Combine the egg, milk and lemon juice. Dredge the chicken pieces in the flour mixture, then dip them into the egg mixture. Dredge the pieces in flour mixture again, and refrigerate at least 30 minutes. Heat 1/2" of oil to 375 degrees in an electric skillet. Place the chicken in the skillet and fry until golden on both sides. Reduce heat to 250 degrees, cover and continue to cook for 25 minutes. Drain the chicken on paper towels.
