SPECIAL FRIED CHICKEN 
2 (2 1/2 lb. size) fryers, cut-up
2 c. pkg. dry bread crumbs
1 tbsp. salt
2 tsp. paprika
1 1/2 c. buttermilk
1/2 c. butter, melted

Preheat oven to 400 degrees. Wash chicken pieces well under cold water, pat dry. Put dry ingredients on a plate, mix together. Dip chicken in buttermilk then in dry ingredients, coating evenly. Arrange in single layers in 2 shallow baking pans. Cover pans tightly with foil. Bake 45 minutes at 400 degrees, then increase oven temperature to 450 degrees. Remove foil and brush chicken with butter. Bake 15 minutes longer or until tender and golden brown. Serves 8.
