SPINACH CASSEROLE 
2 lbs. fresh spinach, or 4 (10 oz.) boxes, frozen
1 grated onion
1 grated carrot
1/2 pt. sour cream
1 (11 oz.) can cream of chicken soup
1/2 pkg. (4 oz.) Pepperidge Farm seasoned dressing

Cook vegetables until tender - drain thoroughly. Add remaining ingredients, reserve 1/2 of crumbs for top. Sprinkle crumbs over top. Melt 1 stick butter and pour over top. Bake at 350 degrees for approximately 45 minutes or until bubbly. Serves 4 to 5.
