CHOCOLATE ZUCCHINI CAKE 
3/4 c. butter
2 c. sugar
3 eggs
2 tsp. vanilla
2 tsp. orange or lemon peel
2 c. zucchini, shredded
1/2 c. milk
2 1/2 c. flour
1 tsp. cinnamon
5 tbsp. cocoa, unsweetened
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 c. chopped nuts

Cream butter and sugar. Add eggs, one at a time. Add vanilla, peel and zucchini. Stir in dry ingredients alternating with milk. Add nuts. Pour into a tube pan. Bake at 350 degrees for 1 hour. Let cool. Glaze if you desire.
