CORN RELISH ALA ZAP 
2 lg. cucumbers, washed and pared
6 med. onions, washed and peeled
2 green peppers, washed, quartered, seed and fiber removed
6 c. corn kernels (fresh, frozen, or canned blanched and drained)
2 (No. 2) cans tomatoes with juice
2 c. sugar
6 garlic cloves, chopped
1 tsp. salt
1 tsp. black pepper
1 tsp. cayenne pepper
2 c. cider vinegar
1 c. water
1 tsp. turmeric
1 tsp. mustard seeds

Medium cut all ingredients except corn in food processor or grinder. Put all ingredients in enamel kettle, bring to boil, stir constantly. Simmer slowly for 45 minutes to 1 hour stirring occasionally. While still warm, put into sterile jars, seal store in cool dark place. Kept if left standing a few weeks before using.

Vary garlic and cayenne to taste, also when adding all ingredients for first boiling, cups of celery, peas, diced beets, cut green beans, cauliflower, and any vegetable you like may be added with appropriate increased of vinegar and sugar. May be cooked without salt (enough natural in vegetables) how about diced carrots too. Zap!!
