FRITTA TORTA 
1 dozen eggs
1/2 c. Parmesan cheese
1 pkg. frozen chopped spinach, squeeze dry
1 pt. low-fat cottage cheese or Ricotta
1 c. rice, uncooked
2 c. chicken broth
1 stick butter, melted
1 pkg. Knorr leek soup
2 lbs. sausage, browned and drained (can substitute hard salami or pepperoni
Garlic powder to taste
Onion salt to taste or minced onions

Bring chicken broth to boil; add rice. Lower heat; cover and cook for 20 minutes. Cool. Beat 9 eggs. Add spinach, cottage cheese, rice, soup mix, sausage, butter, garlic powder, and onion salt. Mix all ingredients. Sprinkle 1/2 cup Parmesan cheese on bottom of 9 x 13 inch Pyrex dish (sprayed with pam). Pour in mixture. Beat remaining 3 eggs. Pour over mixture. Sprinkle remaining 1/4 Parmesan cheese. Bake at 350 degrees until golden brown and knife comes out dry.
