“SNAPAROONS” IS IN:

SNAPAROONS 
A Crisp Sandwich Cookie.

1/3 cup margarine
1/3 cup packed brown sugar
1 egg
1/3 cup molasses
1 1/2 cups sifted all-purpose flour
1 tsp. baking soda
1/2 tsp. ginger
1/2 tsp. cinnamon
1/4 tsp. ground cloves
Coconut Cream Filling (see below)

Preheat oven to 375°F.

Cream margarine and sugar. Add egg and molasses. Beat well. Add flour sifted with baking soda and spices. Mix well. Drop by teaspoonfuls onto a baking sheet.

Bake at 375°F for 7 to 8 minutes.

Cool cookies. Form a sandwich with two cookies and Coconut Filling.

COCONUT CREAM FILLING:

2 tbsp. margarine
3/4 cup sifted confectioners' sugar
1/2 tsp. orange extract
1/4 cup shredded coconut flakes

Cream margarine. Add confectioners' sugar and orange extract. Beat until smooth and creamy. Blend in coconut flakes.

Makes 1 1/2 dozen.
