SPINACH CHEESE PIE | |
1 lb. ricotta or (small cottage cheese) 1 1/2 c. shredded Mozzarella cheese 2 eggs 1 baked pie shell 1 tsp. salt 1/8 tsp. pepper 10 oz. spinach, drained Beat eggs in large bowl and add and mix by hand the ricotta, 1 cup Mozzarella, spinach, salt and pepper. Pour into baked pie shell sprinkle with 1/2 cup Mozzarella. Cover lightly with foil. Bake at 350 degrees for 1 hour 15 minutes, let cool 15 minutes before serving. |
