THE GREAT PUFFY PANCAKE 
Easy to make. Serves 3. (Double this for 6 and use two skillets).

1/2 c. flour
1/2 c.milk
2 eggs, slightly beaten
Pinch nutmeg
4 tbsp. butter
2 tbsp. confectioners' sugar
Juice of 1/2 lemon

Preheat oven to 425 degrees. Mix flour, eggs, milk and nutmeg together, leaving batter a bit lumpy. Melt butter in large frying pan and add the batter. Bake 15-20 minutes until golden brown. Sprinkle with confectioners' sugar and return briefly to oven. Sprinkle with lemon juice. Cut into wedges.

May use strawberries, peaches, or fruit of your choice on top of pancake when serving.
