CHICKEN SALAD 
1 c. cubed, cold cooked chicken
1/2 c. diced celery
1 sweet pickle, chopped (optional)
1 1/2 tsp. lemon juice
1/4 c. mayonnaise, add more if dry
1/4 tsp. salt
1-2 hard cooked eggs, med. diced

Toss together chicken, celery, salt, pickle and lemon juice. Mix in mayonnaise. Carefully fold in eggs. Chill thoroughly. Arrange in lettuce cups or use for sandwich filling.
