SOUTHERN OATMEAL COOKIES 
1 c. shortening
1 c. sugar
1 c. brown sugar
2 eggs
1 1/2 tsp. vanilla
1 1/2 c. flour
1 tsp. salt
1 tsp. baking soda
1 c. walnuts (chopped)
3 c. oats (uncooked), not instant

Cream shortening and sugars. Add eggs and vanilla. Sift flour, salt and soda. Fold into creamed mixture. Stir in oats and nuts. Roll into small balls and place on a greased cookie sheet. Bake at 350 degrees for 10 to 12 minutes or until golden brown.
