LIVER DIP 
1 lb. beef, calf or pig liver
1 tbsp. onion, minced
1 (16 oz.) carton plain yogurt

Cover liver in cold water and simmer. When cooked, remove and grind in food processor or food grinder. Set aside. Place yogurt in blender. Add onion and ground liver. Blend until smooth (if necessary, add reserved liver broth or water to achieve proper consistency). Keep tightly covered and refrigerate until needed. Use within 3 to 4 days for maximum freshness.
