SQUASH CASSEROLE 
2 lbs. yellow squash
2 eggs, beaten
1 sm. chopped onion
1/4 c. soft butter
6 to 8 crushed crackers
1/2 c. grated Cheddar cheese
Salt and pepper to taste
1/4 c. chopped green pepper or 1/4 c. chopped tomato or both
Dash of sugar

Boil squash in salted water until tender. Drain well and mash. Add egg, onion, green pepper and or tomatoes, cracker crumbs, salt, pepper and sugar. Put in buttered baking dish, dot with butter. Bake at 375 degrees for about 45 minutes.
