SQUASH CASSEROLE 
3 c. squash (yellow or zucchini)
1/4 c. onion, chopped
1/4 c. green peppers, chopped
1 tomato, peeled and cubed
butter
Salt and pepper to taste
1 c. bread crumbs
1 c. shredded cheese

Cook first 4 ingredients in about 1/4 cup water until tender. Add butter, salt and pepper. Drain any liquid, then our into a greased baking dish. Sprinkle shredded cheese and bread crumbs on top. Bake at 350 degrees until bubbly and cheese is melted.
