Let roast stand at room temperature at least 30 minutes per pound before baking. Season roast with salt and pepper. Place the roast, ribs down, uncovered, in shallow baking pan; put in oven thoroughly preheated to 500 degrees. Cook 5 minutes per pound, then turn off heat and leave meat in the unopened oven for at least 2 hours. Roast will be crusty and brown outside and evenly rare and juicy inside.
The important things are to have the roast at room temperature and to leave the oven closed for at least 2 hours. The roast may remain in closed oven for up to 3 hours.
