CAJUN BEAN SOUP 
1 pkg. Cajun 15 beans
2 lb. regular or Italian sausage
1 large onion, chopped
1 can stewed or diced tomatoes
1 or 2 cloves garlic, minced

Wash and soak beans overnight or for 8 hours. Drain. Add 2 quarts water. Bring beans to a boil. Reduce heat and let simmer for 2 1/2 hours. In skillet, sauté onion, garlic and sausage until sausage is brown. Drain excess grease. Add to beans with the tomatoes and Cajun flavor packet. Simmer 30 minutes. Salt and pepper to taste. Make a pan of corn bread and enjoy.
