QUICHE LORRAINE 
Pastry for single 9-inch crust
1 1/2 c. grated Swiss cheese
1 tbsp. flour
1/2 lb. bacon
1 lg. onion, sliced
2 tbsp. butter
Few grains cayenne
3 eggs
1 c. milk
1/2 c. cream
1/2 tsp. salt
Dash of nutmeg

Heat oven to 450 degrees. Mix cheese and flour. Fry bacon until crisp. Separate onion slices into rings and cook in butter until golden. Spread shredded cheese in the pie shell. Sprinkle with crumbled bacon and onion.

Beat eggs slightly. Add milk, cream and seasonings. Pour into pastry shell and bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees and bake an additional 15 minutes, or until custard sets. Cool 10 minutes before cutting.
