HADDOCK MEDLEY 
1 lb. fresh/frozen haddock
2 bunches scallions (cut up)
2 peppers (sliced)
1 med. summer squash
1 med. zucchini
1 lg. can stewed tomatoes
Cooked rice or spaghetti

In skillet saute all of the vegetables in a little oil for about 10 minutes. Add to the skillet, can of tomatoes (do not drain). Set fish on top of vegetable mixture and simmer for 15 minutes or until fish is flaky. Serve over cooked rice or pasta.

(Very low-fat recipe and any alternates for vegetables can be used.)
