PUMPKIN COOKIES 
1/2 c. butter
1 1/2 c. brown sugar
2 lg. eggs
1 c. pumpkin
1 tsp. vanilla
1 1/2 tsp. pumpkin pie spice
1 tsp. lemon peel
1 tsp. lemon juice
2 1/2 c. flour
3 tsp. baking powder
1 tsp. salt
1/4 tsp. ginger
1 c. walnuts, if desired

Cream sugar and butter; add eggs. Stir in pumpkin, vanilla, lemon peel and juice. Sift flour with dry ingredients. Blend with butter mixture. (Add nuts if used.) Drop by tablespoon on greased cookie sheet. Bake at 375 degrees 12 to 14 minutes. Frost with your favorite vanilla butter cream frosting. Recipe doubles well.
