SWEET POTATO BISCUITS 
3 c. sifted flour
3/4 c. sugar
1 1/2 tsp. salt
1/2 c. shortening or lard
4 ROUNDED tsp. baking powder
2 1/4 lg. sweet potatoes, cooked and mashed

Mix all ingredients together while potatoes are still warm. Gather into ball. Roll out as for any biscuits. Cut into biscuits, dipping cutter into flour often to keep from sticking. Also, use flour under dough to keep from sticking to surface. Bake on an ungreased cookie sheet for 10 to 12 minutes at 400 degrees. Freeze part of batch for later meals. Microwave to serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
