HERB-BAKED FISH 
1/4 c. butter
2/3 c. crushed saltine crackers
1/4 c. grated Parmesan cheese
1/2 tsp. dried basil
1 lb. fish fillets (sole, flounder, etc.)
1/4 tsp. garlic powder
1/2 tsp. dried oregano

Melt butter. Combine crushed crackers, Parmesan, basil, oregano, and garlic powder. Dip fish in butter then in crumb mixture. Arrange in single layer in buttered baking dish. Drizzle any remaining butter or crumbs over top. Bake at 350 degrees for 20-25 minutes. Serves 3-4.
