GRANDMOTHER STYLE PICCALILLI | |
22 med. green tomatoes, quartered 1 pt. sm. onions 6 green peppers, quartered 6 red peppers, quartered 1 1/2 qt. vinegar 3 1/2 c. sugar 1/4 c. salt 1 1/2 tsp. ground allspice 1 1/2 tsp. ground cinnamon 4 tsp. celery seeds 1/2 c. mustard seeds Wash all vegetables. Put through food chopper, using medium blade. Drain. Place vegetables in a large kettle; add 1 quart vinegar. Boil for 30 minutes, stirring frequently. Drain. Discard liquid. Return vegetables to kettle and add remaining vinegar and sugar. Add salt and spices. Simmer for 3 minutes. While packing jars, keep mixture simmering. Pack into one hot jar at a time to 1/2 inch of jar top. Adjust lids. Process in boiling water bath for 5 minutes. Remove jars and complete seals unless closures are self sealing. |
