ENCHILADA | |
4 cans hot enchilada sauce 4 cans mild enchilada sauce 4 cans water Dash of chili powder 1/2 tsp. cumin powder Onions to taste 3 lbs. hamburger 2 blocks Colby cheese, grated 2 pkgs. flour tortillas Black olives, optional Chopped garlic Boil together enchilada sauces, water, chili powder, cumin powder, and garlic for 2 hours. Brown hamburger and onion until done. In a skillet with small amount of oil, heat tortillas on both sides. Lay on paper to remove oil. Place on plate. Put about 1 tablespoon of hamburger mix, chopped onion, cheese (grated), olives. Roll and place in 3-inch deep baking dish. Repeat until pan is full. Pour sauce over until full. Bake at 400 degrees for 30 minutes until sauce is almost gone. Put grated cheese on top to cover. Melt cheese and serve. |
