POTATO PANCAKES 
1 3/4 c. grated raw potatoes
2 tbsp. finely chopped onion
2 egg whites
1/4 c. flour
3/4 tsp. baking powder
1/4 tsp. onion powder
1/4 tsp. garlic powder
Pinch pepper
About 1/4 c. oil

Mix potato and onion. Beat egg whites until they form soft peaks. Fold into potato mixture. Add flour, baking powder, onion powder, garlic powder and pepper; mix well.

Heat oil in large skillet. Spoon batter into skillet. Spread to 1/2 inch thickness. When browned, turn and cook second side. Drain on paper towels. Maybe served with warm applesauce or sour cream. Yields: 8 pancakes; 95 calories. 6.9 gm fat. 49 mg sodium. No cholesterol each.
