COUNTRY CREAM RAISIN PIE 
1 1/2 c. raisins
2 c. water
2 c. light cream
1 c. brown sugar
1/4 c. cornstarch
1 1/4 tsp. nutmeg
1/4 tsp. salt
3 tbsp. water
2 tsp. lemon juice
1/3 c. chopped nuts

Simmer raisins and 2 cups water for 20 minutes. Add cream and sugar and simmer 5-7 minutes more, stirring to prevent scorching. Mix cornstarch, salt, nutmeg and 3 tablespoons water. Add and cook until thick, stirring. Add lemon juice. Pour into baked pie shell. Sprinkle with nuts. Bake at 350 degrees for 15-20 minutes. Cool.
