OKRA FRITTERS 
1 (10 oz.) pkg. frozen cut okra, thawed & drained
1 c. self-rising flour
Salt & pepper to taste
2 beaten eggs
1/2 c. diced onion
1/2 c. chopped red or green tomatoes
1/2 c. evaporated milk

Combine dry ingredients. Stir in eggs and milk. Fold in vegetables. Drop into deep fat by tablespoonfuls. Fry for about 2 minutes on each side or until lightly browned. Drain on paper towels.
