CHICKEN SALAD 
12 c. cubed, cooked chicken
1 c. sliced water chestnuts or diced jicama
3 c. cashews or almonds
1 c. chopped green onion
2 c. green grapes or mandarin oranges, drained
1 sm. head lettuce, shredded
2 cans chow mein noodles
Salt & pepper to taste
1 c. mayonnaise
1/4 c. lemon juice

Mix all ingredients except cashews, noodles, mayonnaise and lemon juice. Combine mayonnaise and lemon juice. Add just before serving. Stir in noodles and cashews at the last moment.

I prefer using the starred ingredients when possible.
